Kimchi from Cabbage Microgreens: A Quick and Flavorful Recipe



Using cabbage microgreens to make kimchi is a fantastic way to incorporate the vibrant flavors and health benefits of microgreens into this traditional fermented dish. Cabbage microgreens are packed with nutrients and add a delightful crunch to your kimchi. Here’s how to create a quick and delicious kimchi using cabbage microgreens!

Ingredients

  • 2 cups cabbage microgreens
  • 1 tablespoon sea salt
  • 1 tablespoon Korean chili flakes (gochugaru) (adjust for spice preference)
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon fish sauce (or soy sauce for a vegetarian option)
  • 1 teaspoon sugar
  • 1 tablespoon water (to adjust consistency)
  • Optional: 1 tablespoon chopped garlic chives or other microgreens for added flavor

Instructions

  1. Prepare the Microgreens: Rinse the cabbage microgreens gently under cold water to remove any dirt or debris. Drain well.
  2. Salt the Microgreens: In a mixing bowl, combine the cabbage microgreens with the sea salt. Toss gently to coat the greens evenly. Allow them to sit for about 10 minutes. This will help draw out moisture and soften the greens.
  3. Make the Kimchi Paste: In a separate bowl, mix together the Korean chili flakes, minced garlic, grated ginger, fish sauce, sugar, and water. Stir until well combined into a paste.
  4. Combine: After the microgreens have wilted slightly, add them to the kimchi paste. If using, add chopped green onions or other microgreens at this stage. Mix everything thoroughly with your hands (wear gloves if desired) until the microgreens are well coated with the paste.
  5. Pack into a Jar: Transfer the mixture into a clean glass jar or airtight container, pressing down firmly to remove any air pockets and ensure that the mixture is compact.
  6. Ferment: Leave the jar at room temperature for 1-2 days to ferment. You can taste it after one day; if you prefer a stronger flavor, let it ferment longer. Once it reaches your desired tanginess, store it in the refrigerator.
  7. Enjoy: Use this delicious cabbage microgreen kimchi as a side dish, in sandwiches, or as a topping for rice bowls!
