Using cabbage microgreens to create sauerkraut is a unique and nutritious twist on the traditional recipe. Cabbage microgreens are packed with vitamins and can add a delightful crunch and flavor to your fermented dish. Here’s how to make sauerkraut using cabbage microgreens!
Ingredients
- 4 cups cabbage microgreens
- 2 cups green or red cabbage, finely shredded (for additional texture)
- 1 tablespoon sea salt (adjust based on taste)
- 1 teaspoon caraway seeds (optional, for added flavor)
- 1-2 cloves garlic, minced (optional)
- Filtered water (if needed for brine)
Instructions
- Prepare the Cabbage: In a large bowl, combine the finely shredded cabbage with the sea salt. Massage the salt into the cabbage for about 5-10 minutes until it starts to release its juices.
- Add Microgreens: Gently fold in the cabbage microgreens, caraway seeds, and minced garlic if using. Mix thoroughly.
- Pack into Jars: Transfer the mixture into clean glass jars or fermentation crocks, pressing down firmly to eliminate air pockets and ensure that the vegetables are submerged in their own juices.
- Create Brine if Necessary: If there isn’t enough liquid to cover the mixture, you can create a brine by dissolving 1 teaspoon of salt in 1 cup of filtered water and adding it to the jars until the vegetables are submerged.
- Ferment: Seal the jars with a lid or cover them with a cloth secured with a rubber band. Leave them at room temperature (ideally around 65-75°F or 18-24°C) for about 5-10 days, tasting periodically until it reaches your desired tanginess.
- Store: Once fermented, transfer the jars to the refrigerator to slow down fermentation. Enjoy your homemade sauerkraut as a side dish, topping for sandwiches, or added to salads!
