Creamy Popcorn Microgreens Soup

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 large potatoes, peeled and diced
  • 4 cups vegetable broth
  • 1 cup raw cashews, soaked in water for 4 hours or overnight
  • 2 cups popcorn microgreens
  • Salt and pepper to taste
  • Fresh chives or additional popcorn microgreens, for garnish


  1. Sauté Aromatics:
  • Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  1. Cook Potatoes:
  • Add the diced potatoes to the pot and stir to combine with the onion and garlic. Cook for another 5 minutes, allowing the potatoes to soften slightly.
  1. Add Broth:
  • Pour in the vegetable broth, ensuring that the potatoes are fully covered. Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for about 15-20 minutes, or until the potatoes are tender and easily pierced with a fork.
  1. Blend Cashews:
  • While the soup is simmering, drain the soaked cashews and transfer them to a blender. Add 1 cup of water and blend until smooth and creamy.
  1. Blend Soup:
  • Once the potatoes are cooked, carefully transfer the soup to the blender with the cashew cream. Blend until smooth and creamy, working in batches if necessary.
  1. Add Microgreens:
  • Return the blended soup to the pot and stir in the popcorn microgreens. Cook for an additional 5 minutes over low heat to allow the flavors to meld together. Season with salt and pepper to taste.
  1. Serve:
  • Ladle the creamy popcorn microgreens soup into bowls. Garnish with fresh chives or additional popcorn microgreens for a pop of colour and extra crunch. Serve hot and enjoy!
