Mixed Microgreens Quesadilla Roll-Up



Take your quesadillas to the next level with these microgreens cheese quesadilla roll-ups. This twist on the traditional quesadilla folds in the fresh, nutritious punch of microgreens with the melty, gooey goodness of cheese, all wrapped up in a crispy tortilla. Perfect as a quick snack, light lunch, or a party appetizer, these roll-ups are customizable and sure to be a hit with both adults and kids alike.

Ingredients:

  • 4 large flour tortillas
  • 1 cup mixed microgreens (such as kale, radish, and pea shoots for a variety of flavors and textures)
  • 2 cups shredded cheese (a mix of cheddar and Monterey Jack works well)
  • 1/2 cup cream cheese, softened
  • 1/4 cup chopped sun-dried tomatoes (optional for added tang and sweetness)
  • 1 avocado, sliced (optional for creaminess and richness)
  • Salt and pepper to taste
  • Olive oil or butter for frying

Instructions:

  1. Prep Ingredients:
  • Lay out the flour tortillas on a clean surface.
  • Spread each tortilla evenly with the softened cream cheese. This not only adds flavor but also helps to glue the microgreens to the tortilla.
  1. Assemble Quesadillas:
  • Sprinkle the shredded cheese evenly over the cream cheese layer on each tortilla.
  • Distribute the mixed microgreens over the cheese. If using, add the chopped sun-dried tomatoes and slices of avocado on top of the microgreens. Season with salt and pepper to taste.
  1. Roll and Cook:
  • Carefully roll up each tortilla tightly to enclose the filling.
  • Heat a little olive oil or butter in a large skillet over medium heat. Place the roll-ups seam-side down in the skillet. Cook for 2-3 minutes on each side or until the tortillas are golden brown and crispy, and the cheese inside has melted.
  1. Serve:
  • Remove from heat and let them cool for a minute before slicing into bite-sized pieces.
  • Serve warm with your favourite salsa, sour cream, or guacamole for dipping.

Tips:

  • For a spicier version, add some chopped jalapeños or a dash of hot sauce to the cheese mix.
  • Experiment with different types of cheese for new flavors; smoked gouda or pepper jack can add a nice twist.
  • The addition of sun-dried tomatoes and avocado is optional but highly recommended for an extra layer of flavor and texture.
