Whether you’re gearing up for a cozy family dinner or looking for something special to bring to the table at your next gathering, these Caramelized Onion & Garlic Chive Microgreen Buns are guaranteed to impress.
What makes these buns extra special? It’s the combination of long-simmered golden onions and the fresh, delicate flavour of our farm-grown Garlic Chive Microgreens. Tender, fluffy, and bursting with flavour, these buns are as versatile as they are delicious.
🍞 Ingredients
For the Dough:
- 2 ¼ tsp active dry yeast
- 1 tsp sugar
- 1 ½ cups warm water or milk (or a mix of both)
- 3 cups all-purpose flour (plus more, as needed)
- ¾ tsp salt
- 1 tbsp sunflower oil (or any neutral oil)
For the Caramelized Onion Filling:
- 1 ½ – 2 cups thinly sliced yellow or sweet onion
- 1 tbsp oil
- Pinch of salt
- 1–2 tbsp chopped fresh Garlic Chive Microgreens (from our farm)
- Optional: 1–2 tsp chopped thyme or dried herbs, or 1–2 tbsp minced garlic
🧅 Step-By-Step Instructions
1. Make the Caramelized Onions
Start by heating oil in a pan over medium-low heat. Add sliced onions and a pinch of salt. Stir frequently and deglaze the pan with a splash of water or veggie broth whenever things start to stick. This low-and-slow method helps the onion’s natural sugars shine.
📌 Pro tip: This process takes about 30 minutes—but patience is key.
If you’re using minced garlic, stir it in during the last 5 minutes so it softens without burning. Add in thyme or herbs if you’d like a more savoury twist. Once deeply golden and sweet, turn off the heat and let the mixture cool completely.
2. Prepare the Dough
In a large mixing bowl, combine warm water or milk with sugar. Stir in the yeast and let it sit for 5–10 minutes until foamy—this means it’s activated and ready.
Next, add oil, salt, and flour. Begin kneading until the dough becomes smooth and elastic. Now comes the magic: gently knead in your caramelized onions and fresh Garlic Chive Microgreens. You may need to dust with a bit more flour to keep it all together.
Form the dough into a smooth ball and place it in an oiled bowl. Cover with a clean towel and let it rise in a warm, draft-free spot for 1 to 2 hours, or until doubled in size.
3. Shape & Second Rise
Once your dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a bun shape and arrange in a greased baking dish or muffin pan for a more defined structure.
If desired, sprinkle a bit of extra Garlic Chive Microgreens on top for a vibrant pop of green. Cover loosely and let them rise for another 30–45 minutes, until puffy and soft.
4. Bake to Perfection
Preheat your oven to 375°F (190°C) and bake the buns for 20–25 minutes, or until golden and fully baked through. The smell? Simply irresistible.
Remove from oven and, while still warm, brush the tops with butter to keep them soft and shiny.
