πŸ‚ Pumpkin Spice Trail Mix with Microgreens πŸ‚

Ingredients:

  • Β½ cup roasted pumpkin seeds
  • Β½ cup sunflower seeds
  • ΒΌ cup chopped pecans or walnuts
  • 1 tsp roasted Microgreen fennel seeds
  • ΒΌ tsp cinnamon, β…› tsp nutmeg, pinch ginger
  • Drizzle maple syrup or honey
  • Optional: dried basil, or cilantro seeds for autumn aroma
  • 1 tsp Grassroots Microgreen Oil (check out our most recent post for the recipe!🌿)
  • Garnish: dried micro basil or pea shoot flakes

Directions:

  1. Toss everything until coated.
  2. Bake at 325Β°F for 15–20 min.
  3. Cool and enjoy with a sprinkle of microgreens for color!

🌿 Savory Chive & Dill Pickle Flavored Pumpkin Seeds 🌿

Ingredients:

  • 1 cup cleaned pumpkin seeds
  • 1 tbsp Microgreen Oil 🌱
  • 1 tsp white vinegar or pickle brine
  • Β½ tsp garlic powder
  • ΒΌ tsp onion powder
  • 1 tbsp chopped dill microgreens
  • 1 tbsp chopped garlic chives
  • 1 tbsp chopped chive microgreens
  • Salt & pepper to taste

Instructions:

  1. Preheat to 350Β°F (175Β°C).
  2. Combine oil, vinegar, greens, and spices. Toss with seeds.
  3. Bake for 20–25 min, stirring midway.
  4. For an extra herb kick, top cooled seeds with additional fresh dill and chive microgreens!
